6 Ingredient Protein Bars
As part of our day to day diet, we try and maximise the amounts of protein we eat to help give us energy throughout the day. While we were doing well at meal times, we struggled with snacks, and found ourselves spending all our money on pretty naff protein bars. So we decided to inspire ourselves on the famous energy bars, and create our own. This is packed with natural plant based proteins from the oats and nuts, as well as fibre and healthy fats.
Oats are naturally gluten free, but if you are coeliac, please make sure to buy specialised gluten free oats to avoid cross contamination.

Ingredients (x8 bars)
1 tbsp peanut butter
100g mixed nuts
100g dark chocolate (we use Lindt 70%)
20g unsalted butter
Preheat the oven to 130 degrees Celsius.
Add the honey and peanut butter into a pot, and heat on a low flame until it starts to bubble.
Add in the oats and the nuts, and mix until the oats are coated in the honey and become crumbly.
Transfer to a baking tray lined with baking paper, and flatten. Then, adding another piece of baking paper on top, roll out with a rolling pin.
Remove the top layer of baking paper, and bake in the oven for 35 minutes.
In the meantime, melt the butter and chocolate in a bain marie. Make sure to stir the chocolate so it absorbs all the butter properly. Transfer to a container big enough to dip the bars in (a tupperware box should do).
Once the bars are finished cooking, trim the edges with a knife so as to obtain a rectangle (save the trimmings, we'll explain in a minute). Then cut in half and then into eights.
Take each bar, and dip them face down in the melted chocolate. Then, lay them on a plate. Once they are all done, cover with cling film and let rest in the fridge for at least two hours.
Chop the leftover trimmings, and cover them in the remaining chocolate, and hey presto! You have a bowl of granola as well! Leave that in the fridge to rest for a couple of hours as well.
Depending on how crunchy you like your bars, we'd recommend taking them out 5 minutes before eating them.
